Today I am sharing one of my all time favorite recipes!! My pumpkin chili! This spring is quite the conundrum with the crazy confusing weather we've been having, so evenings are still quite chili(pun intended!)
Is there anything better than cozying up to a yummy bowl of chili?!
Some people think you can only eat pumpkin in the fall! And to those people I say shame on you!! Pumpkin is the perfect way to sneak veggies into food! And it's absolutely a tasty delight! So pumpkin can really be utilized any time!! I've shared this recipe on the old bloggity blog before, but really it's so yummy-- it's totally worth repeating!!
1 lb of ground turkey (or hamburger, your choice!)
2 cans of diced tomatoes
1 can of 100% pure pumpkin (I use Libby's)
1 can of pinto beans (drained and rinsed)
1 can of kidney beans (drained and rinsed)
1 can of black beans(drained and rinsed)
1/4 cup extra virgin olive oil
1 onion finely chopped (optional)
1 TBS cumin
2 TBS chili powder
1 tsp pumpkin pie spice
1/2 tsp salt
Brown turkey and sprinkle with a little minced garlic and parsley. Meanwhile combine all other ingredients into a chili pot. Add turkey and stir. Bring mixture to a boil, then simmer and cook for about 45 minutes to an hour. Sprinkle on a little shredded cheese and sour cream if desire. This chili is so delish! I always whip up a batch of cornbread as a side.
